    I'm not a huge meal planner. I usually cook once, eat twice. Do that for a couple of meals and then have leftover night. We have done several vegetarian stretches for a couple of months. I think it's great for cleansing, but I feel better when I don't exclude healthy animal protein from my diet.

    Going vegetarian for a short time or even once a week is such a great way to save money! I love your meal plan as I'm always looking for creative ways to use beans and other non-meat entrees.

    I do meal planning somewhat...but I admit, a lot of the time, I "plan" on incorporating leftovers, so I'm not cooking everything from scratch!

    Some day I hope we can plan our meals out on a weekly basis...for now we're trying to have more organic fruits and vegetables in the house to include with each of our meals.

    Um... YUM! Thanks for the inspiration! Those meals sound awesome. We had split pea soup last night and my toddler ate as much as my husband!! Guess that's something to keep on the menu, haha!

    I agree. A meal plan is an excellent way to stay organized, be efficient with food planning, and reduce food waste - as well as saving my sanity.
